Lunch Smoothie--"It's Easy Being Green"

February 13, 2013

Well, it's day 1 of my green diet and so far, so good!

Since Monday, I have made 4 green smoothies. They've all been different, and they all have tasted wonderful! I use them as meal replacements as they usually make between 2 1/2 to 3 cups.

I made my lunch smoothie before I left for work today. Here's what's in it:

  • 1/2 cup grapes
  • 1/2 orange, peeled
  • 1/4 cup fresh pineapple, core included
  • 1/2 banana, peeled
  • 1/2 carrot--or in my case, a small handful of baby carrots
  • 1 cup fresh spinach, washed
  • 1/2 apple, quartered
It's called the "It's Easy Being Green Smoothie" from the Vitamix recipe book. Pretty simple. So far, I've learned I'm drawn to the recipes containing pineapple. It and the orange are definitely the dominant flavors in this smoothie. I made one the other night using a lime...wow! It was super good! I love the sourness of limes and lemons, so I knew I would like it. I've been told the longer I make these smoothies, the less I will have to follow recipes and can just throw in random fruits and veggies. For now, I'll follow the path more traveled. :)

I threw all of those ingredients in the order listed into my blender and added about 3 cups of ice.

Not the prettiest color green, but very tasty and nutritious! Lunch...done!

*It's a little bare right now, as I'm just starting out. I'll share more recipes and info as I learn it. :)
