My S'mores Obsession Continues + How to Spice Up Canned Corn

In the last week, I seemed to have developed a slight obsession with s'mores (s'mores fudge, s'mores cookies and s'mores red velvet brownies)...or maybe just chocolate and roasted marshmallows. Either way, I have run across some pretty awesome recipes that I have tried. Others, I have just made up.

This is what happens when my day off comes on Wednesday and all the cleaning is already finished. :)

I had some Puff Pastry sheets in the freezer and decided to do something with them. So I thawed out one of the sheets, rolled it out and sliced it up.


I separated each of the rectangles on a baking sheet and baked them at 400 degrees for 15 minutes. They got a little too brown for my liking; 13 minutes would've probably been better.

While those were baking, I microwaved some chocolate chips and heavy cream, and in a separate bowl I microwaved peanut butter, powdered sugar and a dash of salt.

After the pastries came out of the oven and cooled for a few minutes, I split them in half. They're very flaky and it's easier to split them in half while they're still a little warm.

I squeezed some of the chocolate mixture on the bottom layer.


Then I placed the other halves on top of the chocolate and slapped the peanut butter mixture on it along with some mini marshmallows. I turned the broiler on and placed them back in the oven for somewhere around 30 to 45 seconds.


I have no clue what to call these. I like the short and sweet titles, like Dirt Cake, so how about Flaky S'mores? Yeah...that sounds good. Here's the recipe:

Flaky S'mores
Ingredients

1 Pepperidge Farms® Puff Pastry sheet
12 oz. chocolate chips
1/4 cup heavy whipping cream
1/2 cup creamy peanut butter
1/4 cup powdered sugar
1 tsp salt
mini marshmallows

If puff pastry sheet is frozen, let sit out for 40 min. until thawed. After thawed, preheat oven to 400°F. Roll out sheet and, using a pizza cutter, cut down the fold lines, making 3 columns. Then cut each column into 6 rectangles, making 18. Bake for 12-13 minutes. Let cool for 5 minutes. Separate each rectangle into 2 layers.

In a small microwaveable bowl, microwave chocolate chips and heavy cream for 1 minute on 70% power. Stir. Microwave in 30 second intervals on 70% power until completely melted. Pour mixture into Ziploc bag and seal. Snip corner of bag with scissors

In a separate microwaveable bowl, microwave 1/2 cup peanut butter for 30 seconds on high. Fold in powdered sugar and salt. Pour mixture into Ziploc bag and seal. Snip corner of bag with scissors.

Turn broiler on.

On bottom layer, squeeze chocolate through Ziploc bag, covering completely. Place 2nd layer on top and squeeze peanut butter mixture on top until covered. Cover peanut butter with mini marshmallows. Place in oven under broiler for 30 to 45 seconds, being careful not to burn the tops of the marshmallows.


Last night, Hubs and I had a perfect dinner on our back patio. Can you believe the weather? 75° in the middle of February? Amazing! If you remember back when our house was first being built, one of my FAVORITE things about our lot was it had an (almost) unobstructed view of the horizon. There are no houses directly behind us, just a power line and some trees way off in the distance, which means spectacular views of the sunset. And you know me; I love those sunsets! Here's a few we have seen from our back porch:

We may not appreciate it as much in the summer because it's so hot, but we definitely took advantage of it last night.

Hubs grilled some marinated chicken breasts and I made some baked potatoes and yummy cream cheese corn. Who else thinks that opening a can of corn and eating it plain is boring? Me too. I had a tub of chives & onion-flavored cream cheese spread, so I tossed some spoonfuls of that in the pot with the corn and heated it up. I diced about 1/4 of a red bell pepper and tossed that in too, along with a diced jalapeño (I learned this tasty trick from my mom & dad). It was so good!

I set up our little round, two-person table on the patio and tried to time the entire dinner to be ready right as the sun was setting. This was our view while we ate: 


I know, I know. This isn't the rolling hills, mountains or ocean we're looking at here. But for a somewhat-highly-populated suburb with hundreds of houses all around us, I'll take it. :) Isn't it gorgeous? There was absolutely no wind at all, so we didn't have napkins and food flying all over the place. It. Was. Perfect. It really didn't even feel like we were in Oklahoma. This time last year, wasn't there a foot of snow on the ground? This has been my kind of winter. We have to take advantage of opportunities like this before another 60-day, 100-degree summer hits us again.
