Banana Bread, Buffalo Chicken Pockets and Calzones, Oh My!

Wow! I see it's been a few months since I've posted anything; oops! :)

It's been a pretty busy summer as Corey and I have been working on stuff around the house, but not things that are interesting enough to write about (putting up a privacy fence, for example).
When we're not busy with boring things like that, we're busy being lazy. You see, we signed up for OG&E's SmartHours, which means the price of electricity is more expensive (sometimes A LOT more expensive) between 2 and 7 p.m., so I haven't done a lot of cooking due to the oven heating up the house more than it already is when I get home from work. I think one day it got up to 86 degrees in our house, and that was on a Wednesday (if you didn't know, I'm off work Wednesdays). I was not about to turn on the air and give OG&E almost 50 cents per kWh! I eventually had to leave and go walk around the mall or something. Bummer. :)

By the time 7:00 got here, Bachelor Pad, Big Brother or something more interesting was happening and I was passed the point of hunger, so our dinners consisted of PB&Js, cereal, a salad or Doritos.

However, after a week of restricting ourselves from indulging in our usual processed, sugary, fatty, unhealthy dinners, we ate nothing but plant-based whole foods and drank nothing but water. If you remember, I hate plain water, so this was definitely a challenge for me due to my super-sweet tea addiction. After reading somewhere, and already knowing subconsciously, just how bad sugar is for the body, I decided it was something that had to be done. I haven't had sweet tea - or any sugar for that matter, including chocolate! - in 9 days. It didn't start out being as hard as I thought it would be...then came Pinterest.

Until last weekend, I hadn't succumbed to the phenomenon known as the Pinterest addiction. But, for some reason I kept being drawn to the "Food and Drinks" section. I've pinned nearly 100 recipes in just a few days! It seems Pinterest is my new sweet tea.

Anyway, if you look at my Pinterest page, you'll see a board aptly named Get. In. My. Belly. I have pinned everything from buffalo chicken tacos to mini apple pies. I plan on trying a lot of them once the weather cools down. With fall usually comes a renewed urge to cook, bake and therefore gain weight.

One of my pins links to a yummy - and super healthy - banana bread recipe. It replaces the sugar and oil with unsweetened applesauce and honey and uses whole wheat flour. I took it one step further and replaced the eggs with an extra banana mixed with 1/2 teaspoon baking powder. The ingredients include whole wheat flour, baking soda, salt, applesauce, honey, baking powder and bananas. Absolutely no dairy, processed foods or hydrogenated oils whatsoever. Plus, it passed the Husband Taste Test, which means it's edible and scrumptious. If it works for him, it works for me! Something else I tried yesterday was Cheesy Buffalo Chicken Pockets, adapted from this pin. These people think of the greatest ideas! It just so happened I had Puff Pastry sheets in the freezer so these were my lunch! I would've used a freshly cooked chicken breast or rotisserie chicken, but I didn't want to run to the grocery store or wait for chicken to thaw and cook, so I used a can of shredded chicken I had in the pantry. I rinsed it off good, though, so it wouldn't smell like nasty tuna. Yuck. See my Treats page for the full recipe. Next time, I'll probably make stuffed pizza pockets. Yum!

Since electricity wasn't too expensive yesterday during the afternoon hours, I decided to go ahead and cook dinner. I browsed my Pinterest board and narrowed it down to two dishes: Buffalo chicken enchiladas and a homemade calzone. The calzone won, and I'm glad it did. Dipped in marinara sauce and ranch dressing, it was so cheesy and good!

Next up are these amazingly delicious-looking mini apple pies. I can't wait!
