Chipotle Lime Roasted Potatoes (with parmesan)

It's summertime, it's Friday, Big Brother premiered this week...what's not to love about this day?! I could go on a rant about it being YOU--not your circumstances--that determines whether or not today is going to be an awesome day, but I'd rather not. Instead, let's mix up our favorite drinks and thank the good Lord we made it to another weekend!

Yesterday, I shared with you my latest Pinterest successes, and today I have another to add to the list: these wonderful Chipotle and Lime Roasted Potatoes



I am happy to report these taste just as great as they look. I did add an extra ingredient, however: grated parmesan cheese...because, why not?

Another great thing about this recipe...it's extremely healthy! Other than the parmesan cheese I added at the end, it is perfect for a plant-based diet. Its only ingredients include potatoes, chipotle pepper in adobo sauce, a garlic clove, lime zest and lime juice, salt, EVOO and cilantro. Plus, they're roasted, not fried. Perfect!
 
Now, there are about a million different things you can do to potatoes to make them taste wonderful. Other than frying them and topping them with lots of cheese, bacon and scallions, this is probably the next best thing.
 
The first thing I could taste was the lime, then the chipotle and adobo sauce. OMG. I could eat these all day.

The recipe calls for new potatoes, but we had red potatoes. This is three of them cut into bite-size pieces.







This chipotle pepper and adobo sauce is heaven in a can. Unless you don't like spicy.
 
YUM. We had them with chipotle turkey breast filets.
 
I purposefully didn't eat my whole serving last night just so I could have them for lunch today. Don't you love it when something is that good?
 
Next time, I think I will make a tequila lime sauce (like that of the no-longer-available Red Lobster Aztec Chicken) to dip or smother the potatoes (and meat) in. Being a runny sauce, it wouldn't weigh the potatoes down. Hmm...
 
The next recipe I plan on trying? This Italian Herbs & Cheese Bread (a Subway copycat). I've never attempted bread before, other than a quick banana bread or cinnamon streusel bread, so this will be a new venture. It could very well be added to the Pinterest FAIL list, lol! I just remember my mom baking bread in loaf pans when we lived in Kansas and it made the house smell SO good. We'll see how it turns out.
