Pinterest Successes!
June 27, 2013As I was going through my Pinterest page, I realized I have successfully recreated more pins than I thought, but none quite as well as these...the Bang Bang Chicken Kabobs and Baked Zucchini Chips.
Here's a pin from CenterCutCook.com I ran across just yesterday morning. I thawed some chicken breast tenders before I went to work and picked up a red bell pepper and yellow onion on my lunch break.
It didn't take long at all to prepare, and the best thing about it? Everything was grilled, so we didn't have to heat up the oven--in turn heating up our house--during OG&E's peak hours when electricity is more expensive. Here's how ours turned out:
The recipe calls for dried parsley to be sprinkled on the chicken at the end, but by the time these were finished, I was so excited to try them, I forgot to add it. Oops. We also had some grilled asparagus with it. Yum.
These. Were. Delicious.
I'm not kidding.
We've had Bang Bang Shrimp before (See the 'treats' page for the recipe. *for the chicken, we used equal parts mayo & Thai sweet chili sauce), so I knew this dish would taste amazing. When making Bang Bang Shrimp, the shrimp first gets fried then tossed in the sauce. For the chicken, we coated it with the sauce as it was being grilled. This allowed the sauce to really caramelize, which in turn made it taste more like an authentic Chinese dish.
The grilled peppers and onions were also great...it's hard to mess those up. Next time, Hubs suggested adding pineapple chunks to those skewers, which I think sounds AWESOME. We will definitely be feasting on this meal again in the next few days.
Then there were these:
Oven Baked Zucchini Chips. The kicker? They're under 100 calories per serving. And the serving is plenty big enough for two people, so it can really be considered under 50 calories. At this point it wasn't even an issue of whether or not I was going to try these...it was an issue of right and wrong. It would've been wrong for me NOT to try these, therefore denying Hubs and myself a healthy snack. I had to do it.
After a Pilates class last night--and because peak hours were over--I decided to whip them up. Here's how they turned out:
