Birthday Goodies for Hubs

Hubs turns the big 2-7 tomorrow (St. Patty's Day!). It's a Monday, which is a bummer, but it gives me the opportunity to make it an awesome Monday!
Since Hubs doesn't like to eat breakfast before he leaves for work, I decided to make him one of his most FAVORITE breakfasts of all time this weekend: blueberry stuffed French toast. I also made my own fresh blueberry compote to go with it. Yum!
First, I made Pioneer Woman's homemade cinnamon bread. Here's how mine turned out:
Isn't it pretty?! This was actually my first loaf of bread to ever make, and it definitely will not be my last. It makes the perfect breakfast toast.
To make the stuffed French toast, I began by making the cream cheese filling. I mixed 4 oz. softened cream cheese with about 1/4 cup of sugar and spread it generously on the slices of bread.
Then, I put blueberries all over and made sandwiches.
For the egg mixture, I mixed 2 eggs, a dash of milk, orange liqueur, orange zest, a dash of cinnamon (not much since the bread included cinnamon) and fresh squeezed orange juice (about 2 tbsp.).
Just dip and smother the sandwiches in the egg mixture and place in a pan with a little butter or non-stick spray over medium/medium-high heat.
For the fresh blueberry compote, I threw in a saucepan a handful of blueberries with about 1 tbsp. of butter and 1/4 cup of sugar. I used the end of a wooden spatula to burst a few of the berries and, over medium heat, let it thicken.
When the French toast was finished, I cut it in half, placed a small dollop of butter on top and finished it off with the blueberry mixture and powdered sugar. YUM.
Next up, a surprise for sweet Hubs: one of his favorite pies.
