Hubs turns the big 2-7 tomorrow (St. Patty's Day!). It's a Monday, which is a bummer, but it gives me the opportunity to make it an awesome Monday!
Since Hubs doesn't like to eat breakfast before he leaves for work, I decided to make him one of his most FAVORITE breakfasts of all time this weekend: blueberry stuffed French toast. I also made my own fresh blueberry compote to go with it. Yum!

At the beginning of the year, we really cracked down on our budget. We have almost completely stopped eating out--with only three exceptions for mini-celebrations--and have been cooking dinner every single night and cooking three meals a day on the weekends. I love it!
Hubs and I were watching the Super Bowl yesterday--mainly for the commercials. Being the lame people we are, we did not go to or host a watch party, but I wanted to make something party-ish. Other than the hearty potato soup I made in the crockpot the day before (which is actually better the second day), I decided to make some oven-"fried" buffalo chicken tenders.
Potato soup: Comfort food at its finest. There's nothing better than a bowl of creamy potato soup on a cold winter day, and luckily that's exactly what we have as the snow is falling outside.

Hubs and I are beginning our THIRD week of juicing for breakfast, and we are seeing (and feeling!) the benefits BIG time. Thanks to my mother-in-law, we acquired a juicer and have used it every single day for the past two weeks. When we made our first juice (a simple carrot, apple and ginger juice), we really had no intention of incorporating it regularly into our diet. My inspiringly healthy co-worker did a few juice fasts, and each time she let me sample her concoctions. I honestly didn't try one I didn't like.
As I was going through my Pinterest page, I realized I have successfully recreated more pins than I thought, but none quite as well as these...the Bang Bang Chicken Kabobs and Baked Zucchini Chips.
Well, it's day 1 of my green diet and so far, so good!
Since Monday, I have made 4 green smoothies. They've all been different, and they all have tasted wonderful! I use them as meal replacements as they usually make between 2 1/2 to 3 cups.

You may remember from yesterday's post I mentioned Hubs and I for seven days restricted ourselves to eating only plant-based, unsweetened whole foods. The biggest surprise for me? I didn't much miss the cheese, sugar or chocolate (gasp!). For an entire week we drank nothing but water. I honestly did not think I would last a day, much less the whole week. I felt better; I slept better; I functioned better. I decided I would try to continue with this diet after the week was finished, but low and behold this post on my Facebook news feed from Gigi's Cupcakes on the sixth day:

In the last week, I seemed to have developed a slight obsession with s'mores (s'mores fudge, s'mores cookies and s'mores red velvet brownies)...or maybe just chocolate and roasted marshmallows. Either way, I have run across some pretty awesome recipes that I have tried. Others, I have just made up.

As most of you know, my sister and I both have an unhealthy obsession with all things The Bachelor and The Bachelorette. After seeing one of my all-time favorites (Kacie) being kicked off last night by arguably the worst Bachelor in history, it got me thinking of my past favorite (and not-so-favorite) contestants. I asked my sister who her favorites were and there were just too many, so we split them up into our top ten favorite female contestants and our top ten male contestants. And they are...
Happy Friday everyone! I hope you all have had a fantastic week! Corey & I have been SO EXCITED all week, but not because we're about to finish another home DIY project; not because we have a coupon from our favorite restaurant (Zio's) that is only good for this weekend; not even because it's the weekend. But because the movie Safe House is in theaters today!! I LOVE guy movies. If it has guns, shootouts, car chases, drug smuggling (not that I am for that), mobs, CIA people or Brazilian rap music (i.e. Fast Five :) ), there's a 95% chance I am going to love it. Add a hottie like Matt Damon, Ryan Reynolds or Paul Walker into the mix, and it doesn't matter what language that movie is in or what the plot is, I am seeing it. Twice. Maybe three times.
Sorry it's been so long since I've given an update! I've been busy visiting all of the area high schools presenting Youth Tour to the juniors; it has brought back memories of Mrs. McAdoo's speech classes (holla back if you remember those, lol!) The only new thing we've done (actually just Corey) is built shelves for his garage. They're nothing fancy to look at and they weren't that hard to build so I didn't even take any pictures :)
